8 Vegan Friendly Recipes To Try This Autumn

10.02.2018

Since we're officially into Autumn, it's time to spend a lot of time baking all the goods in the kitchen using every pumpkin spiced mix or gingerbread flavoured spices we can find. I find It so much easier to get creative in Autumn since all the festivities are on their way and the end of the year suddenly becomes a lot more exciting. Last year I made my very first pumpkin bread and my goodness that was the best treat I have ever made, so I'll definitely be baking it again this year and possibly make it a tradition! I also created my own pumpkin chocolate chip cookie recipe and was pleasantly surprised, so I definitely want to try recreating this as I eyeballed the entire recipe and it may need a few changes here and there.

Since I know so many people love baking this time of year, I thought I would round up a few recipes I'm in desperate need of trying. All of these recipes are perfect for autumn with a mixture of all the best spices, so I hope you enjoy recreating them if you get the chance!

Vegan Gluten-Free Carrot Cake by Feasting On Fruit -
Topped with a cashew frosting, this sounds like it would be a perfect afternoon treat with a cup of coffee and an episode of Gilmore Girls. I have just realised how much I need this right now. Growing up I was never a fan of carrot cake, but I've grown to like a lot more foods over time, so I'm bound to start loving this when I decide to whip it up soon!

Vegan Cinnamon Swirl Cake by Vegan Richa -
Oh my, doesn't this just sound perfect? I love anything cinnamon flavoured, particularly during this time of year, so I cannot wait to make this and share it with the family as I know they'll love it! This recipe can also be made into cupcakes, which would be perfect for any family occasions during the festive months!

This recipe sounds fairly similar to the cinnamon swirl cake above, but if you're a donut fan then these would be the perfect treat! I have yet to actually make my own vegan donuts, so I'm desperately wanting to try these!

Vegan + Gluten Free Swedish Apple Cake by Happy Health Blog -
This recipe not only looks incredible, but it's also giving me all the autumn vibes! and although I've mentioned this about every recipe above, I cannot wait to try making this! I've never tried making anything using apples like this and I love experimenting with new things, so this seems exciting.

Vegan Pumpkin Chocolate Chip Biscotti by The Conscious Eater -
This is definitely one of the healthier treats on this list, but it doesn't mean it's any less amazing. I haven't been able to have biscotti since following a plant based diet and this is the only recipe I've come across! It's also pumpkin flavoured with chocolate chips, so of course it's bound to taste good.
I've followed so many recipes from Beaming Baker and I've loved every single one, so I'm very excited to give this one a go. I always find that the outcome of banana / pumpkin bread is always better than cupcakes for me, so this recipe is perfect! I love adding nuts into any recipe, but this one seems perfectly autumnal and great for a rainy day.

Cinnamon Spice Chickpea Donuts by Green Smoothie Gourmet -
I know a lot of people probably think that a recipe like this using chickpeas is a horrible idea, but it's actually great for texture and the taste is unnoticeable. The fact that this is cinnamon spiced makes it perfect for autumn and winter and would be the perfect Christmas treat (too soon? I don't think so).

Chai Spiced Quick Bread by Feasting On Fruit -
I've heard so many great things about chai flavoured things from lattes to cupcakes, so I was certainly intrigued when I saw this recipe for bread as I was scrolling through my Pinterest. This recipe seems really festive as it also uses spices such as cinnamon and ginger and topped with the vanilla frosting sounds like a dream.

What's your favourite thing to bake in Autumn?

Love Always,
