10 Healthy Lunch Ideas For Winter


Maintaining a healthy diet can be hard, especially during the colder months. It's so much easier to reach for all things comforting, rather than building up a refreshing salad when you're cold, I mean who can blame you? My personal favourite lunch this time of year is vegetable soup, but eating that every day isn't exactly ideal and can get pretty boring after a while, let's be real. I'm always looking on Pinterest for inspiration, especially when it comes down to meals as eating the same foods all the time gets dull very quickly, so finding new recipes on there always gives me motivation to get cooking and whip up something delicious.

I know a lot of people lose motivation this time of year (I know I do), but fuelling yourself up with good food for your body can make you feel just that bit more energised, and you'll thank yourself for making a great meal afterwards. Lunch time meals can still be just as simple as making a sandwich, but there's so many different kinds of meals you can make that are good for you and still remain quick and easy, plus you can always double the amount of servings in the recipe and make enough for the following day.

My other personal favourite simple lunch idea is pesto pasta, either homemade or store bought, it's always just as good! Sticking to low ingredient pestos are definitely best as it doesn't take many ingredients to make pesto taste great, so having tons of ingredients in the jar is unnecessary and most likely a lot unhealthier. I always like adding additional veggies to my pesto pasta to give it a bit more texture and flavour, so adding things like spinach, cucumber, pine nuts, seeds, or all sorts of greens make it an amazing nutritious meal.

Quinoa is also another favourite of mine as it's such a versatile ingredient, it literally goes well with anything all year round! Even in the winter, quinoa salads are brilliant as it's so comforting and if you mix it with all sorts of different spices, it doesn't even taste like a bulk standard, boring salad.

I hope this has given you a bit of inspiration to try some new meals (they're all vegan friendly) or inspired you to come up with a few of your own ideas! It's always nice finding new recipes to fall in love with and mixing things up at meal times.
