Guess who's back with another weekend treat recipe? ME.

Also, can we just talk about how great chocolate and peanut butter are as a combination? it's seriously a dream.

So, as someone who loves this flavour combo, of course it was only natural to think of something consisting of the two and BOOM, chocolate and peanut butter cookie sandwiches were born.

I've been wanting to create a recipe like this for a while now as one cookie is just never enough, right? I'm so happy with the result of these delightful treats, however I might make them a bit smaller next time!

I managed to make just over 30 cookies with this recipe, with a few left over and I then formed 15 cookie sandwiches with the help of ManiLife original roast crunchy peanut butter* as a delicious addition inside.

So if you fancy getting your bake on this weekend, I'd highly recommend trying this recipe for yourself so you can really see how good they are!

- CHOCOLATE & PEANUT BUTTER COOKIE SANDWICHES - 

You will need:

For the cookies:

- 2 cups self raising flour
- 1 cup vegan butter
- 2 cups light brown sugar
- 2 tsp vanilla extract
- 1/2 cup non dairy milk (I used almond)
- pinch of salt
- 2 tsp baking powder
- 1/2 cup peanuts, roughly chopped
- 1 bar of vegan chocolate, roughly chopped (alternatively use a large handful of vegan chocolate chips)

For the buttercream:

- 1/2 cup icing sugar
- 3/4 cup vegan butter
- 1 tsp vanilla extract
- 4 tbsp ManiLife original roast crunchy peanut butter* (adjust to taste)

Method -

1. Preheat the oven to 180C.

2. Start by sieving the flour into a large mixing bowl along with the baking powder and salt and mix until combined.

3. In a separate bowl, cream together the sugar and butter until it's light and fluffy. Pour in the milk and vanilla and mix it all together until it's well combined.

4. Slowly add the wet mixture to the dry ingredients, mixing as you go. If the mixture doesn't seem thick enough, add a bit of extra flour to thicken it up, but only a tiny bit!

5. Divide the mixture into two separate bowls, one for the peanuts and one for the chocolate. Chop up the peanuts into small chunks and add into one of the bowls, folding them in with a wooden spoon. For the other bowl, chop up the vegan chocolate into small chunks, again folding them in with a wooden spoon.

6. I started off by cooking one batch and then once they were done, cooked the other as I needed to use two baking trays at a time. Starting with the chocolate batch, spoon the cookie dough onto a baking tray lined with parchment paper, using 1-2 tbsp to make each cookie.

7. Place the trays in the oven for around 15 - 20 minutes until golden. If the cookies still feel soft, they will harden as they cool.

8. Repeat step 6 and 7 with the peanut cookies. Leave the cookies to cool completely for around 20 - 30 minutes before starting the buttercream.

9. In a medium sized bowl, cream together the butter and icing sugar with a whisk, until completely smooth and fluffy. Add in the vanilla extract and peanut butter, adjusting the peanut butter to taste. Mix it all together until the buttercream is fluffy, making sure that it isn't runny at all.

10. Using a knife, spread a thick layer of buttercream on the peanut cookies and then sandwich each one with a chocolate chunk cookie and finally enjoy!

  2. These look amazing!! totally giving this recipe a try tomorrow because I'd love to make vegan friendly treats that actually taste good. I've had some that didn't turn out so well in the past.
