4-Ingredient No Bake Biscoff Protein Balls | Vegan

These 4-Ingredient no-bake Biscoff protein balls have been a serious hit on my Instagram (@veganshannon) and have quickly become one of my most popular recipes ever. I'm not joking when I say I make these almost every week to snack on throughout the week as they're so easy to grab from the fridge and be satisfied afterwards as they're a delicious protein-based snack!

Using only 4 ingredients and no need for an oven, these biscoff protein balls are the perfect quick snack as well as being so easy to make!

You will need:

- 1 1/2 packets of Lotus Biscoff cream sandwich biscuits
- 6 heaped tbsp Unicorn Superfoods caramel slice protein powder
- 1/4 cup Lotus biscoff spread
- 1 cup vegan white chocolate

1. Add the biscuits to a blender (don’t remove the cream) and blend until they form a slight paste.
2. Scoop the paste into a bowl and add the protein powder. Stir until well combined.
3. Add the Biscoff spread and mix again.
4. Roll the mixture into 8 balls and place on a plate / baking tray with parchment paper.
5. Place the plate in the freezer for 15 minutes.
6. Melt the white chocolate in the microwave for 35 seconds. Stir and then microwave again for a further 35 seconds or until completely melted.
7. Remove the protein balls from the freezer. One at a time, add to the bowl of white chocolate so that they coat evenly. Place back on the plate and space them out. Repeat until they are fully covered.
8. Place back in the freezer for a further 15 minutes.
9. If you have any chocolate left over, drizzle the rest over each of the protein balls and sprinkle some biscuit crumbs on top!
