No Bake Vanilla & Biscoff Protein Bars | Vegan

I love a no-bake recipe, especially in the warmer months when the thought of using an oven is absolute hell. These no-bake protein bars are perfect all year round, but since they're so quick and easy to make, it means being in the kitchen for a minimal amount of time, therefore perfect for the spring and summer months! 

Unicorn Superfoods have the most delicious range of vegan protein powders and I will use any excuse to add them into pretty much anything. I have lots of recipes on my blog and on my Instagram page that mostly include their caramel slice protein, but I also LOVE their vanilla cake protein used in this recipe!

These bars are quick and easy to make and taste amazing!


- NO BAKE VANILLA & BISCOFF PROTEIN BARS - 

Makes: 6 

You will need:

- 1 cup of oats
- 6 tbsp Unicorn Superfoods vanilla cake protein powder
- 1/3 cup maple syrup
- 3 tbsp coconut oil, melted
- 5 heaped tbsp Biscoff spread
- 1/4 cup vegan white chocolate
- 2 lotus Biscoff biscuits

Method:

1. Combine the oats and protein powder in a mixing bowl.
2. Melt the coconut oil in the microwave for 35 seconds. Pour into the mixing bowl along with the maple syrup.
3. Spread the mixture out into a loaf tin lined with parchment paper. Press the mixture into the corners and flatten it so it forms an even base layer.
4. Melt the Biscoff spread in the microwave for 35 seconds.
5. Pour the melted Biscoff over the base layer in the loaf tin. Spread it out so that it forms an even layer.
6. Place the loaf tin in the freezer for 10 minutes.
7. Melt the vegan white chocolate in the microwave in 35-second bursts, stirring in between and until completely melted.
8. Remove the loaf tin from the freezer and drizzle the melted white chocolate all over. Crumble up the Biscoff biscuits and sprinkle the crumbs on top.
9. Place the loaf tin back in the freezer for another 20 minutes until completely set.
10. Slice the slab into 6 bars and store in an airtight container in the fridge.
