Chocolate And Pistachio Oat Cookies | Vegan


These quick and easy chocolate and pistachio oat cookies are the perfect healthier alternative if you want to do some baking and fancy a little treat. I love this flavour combination as the sweetness from the chocolate is so delicious paired with the saltiness from the pistachios! I also added my favourite vegan protein powder from Unicorn Superfoods into these cookies for an extra protein boost!

This recipe uses minimal ingredients so you may already have these ingredients at home! 


You will need:

- 2 cups oats
- 1/2 cup Unicorn Superfoods vanilla cake protein powder
- 1/2 cup pistachios
- 1/2 cup dark chocolate chunks
- 1/2 cup peanut butter
- 1/2 cup maple syrup
- 3 tbsp oat milk
- 3 tsp cinnamon
- 2 tsp nutmeg


1. Preheat the oven to 200C and line a baking tray with parchment paper.
2. In a large mixing bowl, add the oats and vanilla cake protein powder.
3. Chop the pistachios and dark chocolate into small chunks. Add them both to the mixing bowl with the oats and mix to combine.
4. In a small saucepan, add the peanut butter, maple syrup and oat milk. Stir and simmer on low heat until everything is combined and it creates a thick sauce consistency.
5. Add the cinnamon and nutmeg and adjust to taste. Mix again.
6. Pour the wet ingredients into the dry ingredients and mix until everything is well combined.
7. Divide the mixture into 12 balls and flatten them a little before baking.
8. Bake for 15 minutes.
9. Decorate with some extra pistachios and melted chocolate!
