Chilli Peanut Noodles | Vegan

Two of my favourite things include peanut butter and all things spicy, so this delicious bowl of chilli peanut noodles is one of my go-to meals! If you need a quick meal idea, then this one is for you!!

I’ve been trying out a bunch of different easy mix’s from Green Force and have been loving them, especially their schnitzel mix which I included in this recipe! It’s high in protein and fibre and is a great chicken substitute.

- CHILLI PEANUT NOODLES - 

Serves: 1 

You will need:

- 1/2 a small onion
- 1/2 red bell pepper
- 1/2 a small aubergine
- a small handful of tenderstem broccoli
- 1 packet Green Force easy mix schnitzel
- 1 tbsp olive oil
- your favourite noodles
- 2 cloves of garlic
- 1 heaped tbsp smooth peanut butter
- 2 tbsp soy sauce
- 1 tbsp hoisin sauce
- 1 tbsp sriracha

Method:

1. Dice the onion and chop up all of the vegetables and set aside.
2. Prepare the Green Force easy mix schnitzel according to packet instructions.
3. In a large non-stick pan on medium heat, add the olive oil. Add the onion and cook for around 3-4 minutes before adding the rest of the vegetables.
4. Cook the schnitzel in a separate pan. (The packet should serve 6, however, I only served 1 with the noodles and then ate the rest the following day with my family, so cook as many or as little as you like at once)
5. Cook your noodles according to packet instructions.
6. In a bowl, combine the garlic, peanut butter, soy sauce, hoisin sauce and sriracha. Add a splash of water and mix.
7. Chop the schnitzel into smaller chunks and place it in the pan with the vegetables and add half of the sauce. Cook for around 3-4 minutes, before adding the cooked noodles.
8. Pour in the rest of the sauce and mix everything together until combined, finally serve it up and enjoy!
