Pear & Apple Crumble | Vegan

Would you believe, I haven't had a fruit crumble in my almost four years of being vegan? Apple crumble used to be one of my favourite childhood desserts and has been something ive been thinking about trying to make vegan for a little while now. So this weekend I tested out my very own vegan version and I can't even begin to tell you how delicious and easy it is!

Served up with vegan custard makes this the yummiest winter dessert. It uses as many as five ingredients and you probably already have them all at home! You've got to try it!

I was kindly gifted a box of organic fruit* from Riverford Organic Farmers, so I used the apples and pears from this box. As these were smaller than the average apple and pear, you may not need as many as I used.

PEAR & APPLE CRUMBLE -

You will need:

For the filling:
- 8 small apples
- 6 small pears
- 2 tbsp coconut oil

For the crumble topping:
- 1 1/4 cups plain flour
- 1/2 cup dark brown sugar
- 1/2 cup coconut oil

Method:

1. Preheat the oven to 200C.

2. Peal and core the apples and pears. Cut them into small chunks and place them in a saucepan with the coconut oil. Allow them to boil for 10 minutes until soft.

3. Prepare the crumble by adding the flour, brown sugar and coconut oil into a medium sized bowl. Mix everything together and form the crumble into breadcrumbs using your hands.

4. Pour the fruit into a circular dish and spread it out evenly. Spoon the crumble topping on top of the fruit and lay it out evenly. Don't make the top too flat though, as it should still have a crumbly effect on top.

5. Place the crumble in the oven for 30 minutes until golden brown and crisp.

6. Serve with vegan custard or ice cream and enjoy!
