Hawaiian Bbq Tofu Bowl | Vegan

I think it's clear by now, that quick and easy recipes are my favourite. I find that these meals are always my go to, especially on days where I'm feeling extra lazy, but they're also the most convenient for a lot of other people too! So, you'll probably be pleased to know that this Hawaiian bbq tofu bowl that I'm sharing with you today will only take up 10 minutes of your time! A quick and delicious dinner?! yes please!

This recipe is also made easier with the help of New Kenji Rice. I have worked with this brand a lot in the past and I absolutely love their microwavable sushi rice as it's such a versatile product that I use so often throughout each week in different recipes!

- HAWAIIAN BBQ TOFU BOWL - 

Serves: 2   Prep Time: 5 mins   Cook Time: 10 mins

You will need:

- 1/2 block of tofu, drained and pressed
- 1 tbsp vegetable oil
- 1 tsp garlic
- 2 tsp ginger
- 1 red bell pepper, cut into chunks
- 1/2 red onion, diced
- 1/2 cup bbq sauce
- 1 tsp sriracha
- 2 tsp soy sauce
- 1/2 tin of pineapple chunks in juice (could also use fresh pineapple!)
- 1 spring onion
- 1/2 pack of New Kenji Sushi Rice

Method -

1. Drain and press the tofu, I usually use extra firm pressed tofu anyway, but if you need to press your tofu properly then this should take around 10 minutes. Once pressed, cut the tofu in half and then again, until you have small cubes.

2. In a medium frying pan / wok, add the vegetable oil on medium heat. Add the garlic and ginger. Place the tofu carefully into the pan, making sure it doesn't crumble. Gently push the tofu around the oil with a wooden spoon, continue to do this every now and then for around 3 - 4 minutes so that the tofu doesn't stick to the pan.

3. Add the red bell pepper and red onion and allow this to cook with the tofu for an extra 5 minutes before adding the bbq sauce (check the label to make sure it's vegan), sriracha and soy sauce. Mix everything around until completely coated and flavours are combined. Add the pineapple chunks and stir. Allow this to simmer on a low heat for 5 minutes while you prepare the rice.

4. Remove the outer sleeve on the rice and peel back the lid just a little bit. Add 2 tbsp of water to the rice so that it isn't hard and mix it around with a fork. Place the rice in the microwave for 2 minutes. If the rice isn't as soft as you would like after this time, mix it around with a fork and place it back in the microwave for a further 30 seconds.

5. Once the rice is done, divide half of the tub between two bowls. The Hawaiian bbq tofu should be done around the same time, so once again divide this between the two bowls! Finally chop up a spring onion into small chunks and sprinkle this on top of the two bowls for a bit of extra flavour! You could also top the bowls with some extra fresh pineapple but this is completely optional!
