Buffalo Cauliflower Bbq Pizza | VEGAN

What's better comfort food than pizza? I can't even begin to think of one.. other than pasta maybe, but either way, all the carbs are essential for a comfort meal, wouldn't you agree?!

I think it's pretty obvious by now that I love adding spice to my recipes. Not only that, but I also love working with Bute Island Foods on recipes, using their dairy free alternatives to create something deliciously cheesy! So with the two combined, I have come up my very own vegan buffalo cauliflower bbq pizza. 

I cooked the cauliflower florets in a delicious buffalo wing sauce and added them on top of a bbq base. I personally think this worked perfectly together, however if you prefer, you could always keep the pizza tomato based instead. Completely up to you!

I used Bute Island's mature cheddar style shreds, however I also think their mild shreds and mozzarella shreds would work the same! They have a huge range of vegan cheeses available on their website, so check them out here.

This recipe is super easy, using minimal ingredients (unless you decide to create the pizza base from scratch) and only takes 30 mins, so it makes for the perfect lazy weekend comfort meal!

- BUFFALO CAULIFLOWER BBQ PIZZA - 

Prep time: 15 mins   Cook Time: 15 - 20 mins

You will need:

- 1 vegan friendly ready rolled pizza base

- 1/2 head caulfilower 

- 1/2 cup buffalo wing sauce 

- 1/2 tbsp garlic granules 

- 1/2 tsp salt

- 3 tbsp bbq sauce 

- 1/3 cup Bute Island mature cheddar style shreds

- 1/2 red pepper, diced

- 1/2 red onion, diced

Method:

1. Preheat the oven to 200C and line a baking tray with a baking sheet.

2. Cut the cauliflower in half and then cut the half into small florets. Place the cauliflower florets in a medium - large bowl. 

3. Sprinkle the salt and garlic granules all over the cauliflower and stir in the buffalo wing sauce, using a spoon to make sure all of the cauliflower is completely coated.

4. Pour out the cauliflower onto the baking sheet, shake them about a little bit so that they are a bit more spaced out on the tray. Place the tray in the oven for 15 minutes, allowing the cauliflower to crisp and absorb the sauce.

5. While the cauliflower is cooking, roll out your pizza dough, making sure the sides are an even thickness. Place the pizza dough onto another baking tray.

6. Spread the bbq sauce all over the base and sprinkle the mature cheddar style shreds on top.

7. Remove the cauliflower from the oven and add the buffalo florets to the pizza. 

8. Dice the red bell pepper and red onion and distribute it evenly onto the pizza before transferring the baking tray to the oven. Allow the pizza to cook for 15 - 20 minutes.
