Healthy Chocolate & Walnut Breakfast Muffins | Vegan

I'm a breakfast type of girl. I love a good bowl of oats in the morning, a smoothie (bowl) or some granola. But one thing I never tried until now was breakfast muffins! I've been hearing a lot about them on instagram and they're constantly on my feed on Pinterest, so I thought why not come up with something just as delicious?

I threw together a bunch of ingredients and hoped for the best, and I'm honestly more shocked than anything as to how good they taste. As much as I love bananas in things like smoothies, I'm not really the type to throw them into baking, but I think I may now be converted! They're such a great addition, not to mention how healthy they are!

These breakfast muffins could easily be sugar free by using stevia rather than refined sugar, which is something I will definitely be doing next time so it becomes more than acceptable to eat 3 in one go.. Kidding, but it would make these muffins just that bit more healthy.


- CHOCOLATE & WALNUT BREAKFAST MUFFINS -

Makes: 7    Prep Time: 10 mins    Cook Time: 25 mins

You will need:

- 2 ripe bananas
- 1/4 cup unsweetened almond milk
- 1/2 cup oats
- 1 cup self raising flour
- 1 tsp baking powder
- 1/2 cup light brown sugar
- 1 tsp vanilla extract
- 3 to 4  heaped tbsp cacao powder (more or less depending on how chocolatey you want them)
- large handful walnut halves, chopped

Method -

1. Pre heat the oven to 200C.
2. In a large mixing bowl, mash up the bananas with a fork or mixer.
3. Pour in the vanilla extract and almond milk and stir.
4. Sieve the flour into the bowl with the wet ingredients, along with the baking powder, light brown sugar, oats and cacao powder. Stir until well combined.
5. Chop up the walnuts into small chunks and fold them into the mixture with a spatular. You could also add chocolate chips at this point if you wanted, however I chose not to.
6. Line a muffin tin with cases or just pour the mixture straight into each section of the tin. Fill each section 3/4 of the way as they will grow! This should make around 7 muffins.
7. Place in the oven and bake for 25 minutes.
8. Once they're cooked, allow them to cool for 10 minutes before enjoying!
