Before going vegan, I used to LOVE Kinder Bueno bars, the hazelnut cream filling was just amazing. Thankfully, Love Raw recently launched their very own vegan version of the bar in milk chocolate and white chocolate, both equally as amazing as each other.
As I couldn't choose which bar to go for, I decided to stuff each cookie with a chunk of the white chocolate wafer bar and some milk chocolate chips, and then topped each cookie with a couple of chunks of the milk chocolate wafer and a drizzle of white chocolate. These cookies are honestly a dream.
This cookie recipe is my go-to, they're incredibly soft, but also a bit chewy, which I love! They're also a family favourite, so I find myself whipping up a batch of these way too often, but I'm not complaining ;)
- VEGAN "KINDER BUENO" STUFFED COOKIES -
Makes: 10 Prep Time: 10 mins Cook Time: 15 mins
You will need:
- 1 3/4 cups plain flour
- 1 tsp baking powder
- pinch of salt
- 1/2 cup vegan butter, softened
- 3/4 cups light brown sugar
- 1/2 cup caster sugar
- 2 vegan eggs (I use Orgran egg replacement or Free & Easy Foods egg replacement)
- 1 tsp vanilla extract
- 1/4 cups vegan milk chocolate chips
- 2 packets of white chocolate Love Raw wafers (4 individual bars) (gifted*)
For Topping:
- 3 packets of milk chocolate Love Raw wafers (6 individual bars) (gifted*)
- 1 packet of white cholclate chips (or your favourite vegan white chocolate bar)
Method -
1. Preheat the oven to 200C and line two baking trays with parchment paper.
2. In a large mixing bowl/stand mixer, combine the plain flour, baking powder and salt.
3. Soften the butter in a mug in the microwave for 30 seconds, this shouldn't melt the butter completely but will be melted enough to keep the texture of the cookies right. Once microwaved, pour the butter into a medium-sized bowl. Add the light brown sugar, caster sugar, vegan eggs and vanilla extract. Mix everything together until completely combined.
4. Add the wet ingredients to the bowl of dry ingredients, once again mixing until everything is well combined. The mixture should now be a soft cookie dough texture.
5. Fold the vegan milk chocolate chips into the cookie dough.
6. Use your hands/tablespoon to scoop out the mixture and place a square of the white chocolate wafer in the middle of each cookie, using your hands to roll the dough around the wafer to create a ball shape. This should make 10 cookies.
7. Place the cookies on the prepared baking trays, spacing them out as the cookies will grow quite a lot.
8. Place the cookies in the oven for 10 -15 minutes, checking on them after 10 minutes. Once cooked, remove them from the oven and allow them to cool completely. Once they have been removed from the oven, they will still be very soft, but they will harden as they cool.
9. Once cooled, melt the white chocolate in the microwave for 25 seconds in a small bowl. Remove from the microwave and stir until they're all melted.
10. Drizzle the white chocolate over each cookie and top them each with two squares of the milk chocolate wafer. Drizzle more of the white chocolate over the top.
