White Chocolate Chunk Marble Blondies | Vegan

Happy Sunday everyone! I've been seeing marble brownies / blondies going around on Instagram for the past year and have always loved the look of them - I just hadn't tried them! well that was until this afternoon when I whipped up a batch of my very own marble blondies. I was recently kindly gifted some goodies from The Free From Kitchen Co, which meant I had a lotttt of chocolate sitting in the cupboard screaming to be used in a tasty recipe!

I absolutely love their products and have been purchasing their chocolate ever since their launch in Tesco a few months ago - their white chocolate is just too good! So I decided to use this bar alongside their dark chocolate bar to create this delicious treat.

This was my first time trying a blondie and I definitely think it was a success, my family loved them! 

- VEGAN WHITE CHUNK CHOCOLATE MARBLE BLONDIES -

Makes: 9
Cook time: 35 minutes

You will need: 

- 1 cup vegan butter
- 2 flax eggs
- 1 tbsp vanilla extract 
- 1 1/4 cups light brown sugar
- 2 cups self raising flour
- 1 tsp baking powder
- pinch of salt
- 1 white chocolate bar from The Free From Kitchen Co*
- 1/2 dark chocolate bar from The Free From Kitchen Co*

Method: 

1. Preheat the oven to 180C.

2. Make the flax eggs by mixing 2 tbsp flax seeds with 6 tbsp of water. Set aside in the fridge.

3. Melt the butter in a saucepan. Once melted, mix it with the light brown sugar in a large mixing bowl. 

4. Add the vanilla extract and flax eggs and stir.

5. Sieve the flour into the bowl with the wet ingredients along with the salt and baking powder, Stirring until well combined. 

6. Chop the white chocolate bar into tiny chunks and fold into the mixture. 

7. Line a baking tray / dish with parchment paper and pour in the blondie mixture. Spreading it out equally with a spatular.

8. Break the dark chocolate into small pieces and place in a glass bowl in a saucepan on top of the stove, filling the saucepan with around 150ml of boiling water. Keeping the heat low, stir the chocolate continuously until it melts, ensuring that it doesn't burn. 

9. Once the chocolate has melted, use a teaspoon to pour the mixture into four lines horizontally and vertically on top of the blondie mix. Use something small and pointy like a toothpick to swirl the chocolate into the blondies so that it creates a marble effect.

10. Place in the oven and bake for 35 - 40 minutes. Checking on it occasionally. Once they're done, leave them to cool for 20 minutes before serving!
