Healthy Vegan Chocolate Protein Brownie Bars

Not all treats have to be unhealthy. In fact, sometimes its more enjoyable to try making your own "guilt free" treats that you begin to enjoy as much as your favourite sugary dessert. These brownie bars are the perfect example - they're packed with protein, but contain no nasty ingredients, yet they are the perfect midday treat to give you that boost of energy that you may need.

This recipe is sugar free, but you could use regular sugar if no calorie sweeteners aren't your thing. I was kindly gifted three protein powders from Roots 'N Shoots, in the flavours berry, vanilla and chocolate. This recipe uses their chocolate protein powder to give you extra protein and the recommended daily allowance of vitamin b12, not to mention the yummy chocolatey flavour!

- CHOCOLATE PROTEIN BROWNIE BARS -

Makes: 9    Prep Time: 10 mins    Cook Time: 30 mins

You will need:

- 2 cups plain flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1/4 cup NatVia sweetener (or caster sugar if you don't want them sugar free)
- 1/2 cup peanut butter
- 1/2 cup maple syrup
- 2 tbsp coconut oil
- 2 flax eggs or other egg alternative
- 1/4 cup almond milk
- 3 tbsp Roots 'n shoots chocolate protein powder*
- 2 tsp cinnamon
- pinch of salt
- 1/4 cup cocoa powder
- 1/2 cup vegan chocolate chips

Method -

1. Pre heat the oven to 180C.

2. In a small saucepan on low heat, add the coconut oil, maple syrup, cocoa powder and peanut butter. Stir everything together and keep stirring so there are no lumps and the edges don't burn. Allow everything to melt completely before removing from the heat and setting aside.

3. In a large mixing bowl, combine the plain flour, baking soda, baking powder, sweetener, salt, cinnamon and chocolate protein powder.

4. Add the chocolate mixture to the dry ingredients and stir everything until completely combined.

5. Slowly pour in the almond milk and add the flax egg / egg replacement and stir, again until completely combined.

6. Fold the chocolate chips into the mixture. This step is optional, but they make such a delicious addition.

7. Line a square tin with parchment paper and pour in the brownie mixture. Place in the oven for 30 minutes, checking on them every now and then. Once 30 minutes has passed, remove the brownies from the oven and use a skewer / knife to poke through the middle of them to check if they are completely cooked through the middle. If the skewer comes out clean then they are done.

8. Allow the brownies to cool for at least 10 minutes before enjoying them!
