Simple Tomato Bruschetta

One of my favourite starters, literally anywhere I go, is bruschetta! The only other option I'm torn between is garlic dough balls (recipe coming soon!) they're both so delicious and honestly two of my top favourite foods. So, this weekend I thought i'd try my own attempt at bruschetta as it generally doesn't seem too difficult looking at it, and I've learnt that it really isn't! In fact, it's super easy and can be whipped up within ten minutes! The perfect quick appetiser to any meal, especially pasta!

With the help of Banhoek Chilli Oil, this gives the dish a slight spicy kick, which makes it so much better!

- SIMPLE VEGAN TOMATO BRUSCHETTA -

Serves: 1-2   Prep: 10 mins

You will need:
- 2 slices of sourdough bread
- 5 medium salad tomatoes, diced
- 1 small red onion, diced
- 3 cloves of garlic, minced
- 2 tbsp of Banhoek Chilli Oil
- 1 tbsp balsamic vinegar
-3 tbsp fresh basil, chopped

Method:

1. Preheat the oven to 180C.

2. In a small bowl, combine 2 cloves of garlic with 1 tbsp Banhoek chilli oil. Brush this mixture onto the two slices of sourdough bread, covering them entirely on one side.

3. Place the bread on a baking tray and place in the oven for ten minutes while you prep the tomatoes and onion.

4. Dice the onion and tomatoes and place them in a large bowl. Add the rest of the chilli oil and garlic as well as the balsamic vinegar and fresh basil. Stir everything together until well combined.

5. The bread should be done around the same time as you have finished the last step, as it only needs to harden and turn slightly golden. Remove from the oven and gently pour out the onion and tomato mix onto the bread. It will be most likely very difficult to eat, so I highly suggest using a knife and fork as the tomatoes will fall!

You could always drizzle on some more balsamic vinegar on top if you like, however I don't really think it's needed as there is a lot of flavour as it is.

As I said, this recipe is so simple and very quick to whip up, it can even be enjoyed as a light lunch instead of an appetiser, it's just so delicious!

If you like a spicy kick to any of your meals, then I highly suggest checking out Banhoek Chilli Oil as it adds the perfect amount of spice to yours meals without having to use any sort of chilli flakes etc. I personally love cooking with it, but it can also be drizzled on top of salads or other raw dishes.
