Simple Lemon & Broccoli Pasta | Vegan

I think we can all agree that quick and easy recipes are the best, right? There's nothing better than being able to throw together a bunch of ingredients within less than half hour, but with this pasta recipe, it will only take up 10 minutes of your time!

I have partnered with Garofalo on this post, to bring you this quick and easy lemon and broccoli pasta! with only 3 main ingredients and a selection of spices, you can bring this meal together in just ten minutes, equally as enjoyable for lunch or for dinner!

Garofalo creates premium Italian wheat pasta, starting in a small town near Naples in Italy way back in 1789, using two simple ingredients, water and very high quality wheat! All of their dry pasta sold in the UK is suitable for vegetarian and vegan diets, containing no egg, even the gluten free pasta ranges!

This recipe is full of flavour, with the cheesiness from the nutritional yeast, the delicious combination of seasonings and the slight kick of spice from the chilli flakes, it's perfect.

- LEMON AND BROCCOLI PASTA - 

Serves: 1   Prep Time: 2 mins   Cook Time: 10 mins

You will need:

- 100g Garofalo Riccioli Pasta 
- 3 large broccoli florets, cut into smaller pieces
- 2 tbsp olive oil
- 1 tsp garlic
- 1 tsp chilli flakes
- 1 tbsp nutritional yeast
- 1 tsp ground black pepper

For the dressing:

- 1 tbsp olive oil
- 2 tbsp fresh lemon juice
- 1 tsp onion granules
- 1 tsp garlic granules
- 1 tsp dried oregano
- 1/2 tsp paprika

Method -

1. Fill a medium saucepan with water and bring to a boil. Once boiling, add the pasta.

2. While the pasta is cooking, chop the broccoli into smaller florets. You could either add them to the pasta water to soften or place them in a bowl and cover with water in the microwave for 3 minutes.

3. In a frying pan, add the olive oil and the garlic and chilli flakes on low - medium heat. Once fragrant, add the softened broccoli and stir it around the frying pan to coat with the flavours. Keep the heat on low so that the broccoli only cooks slightly.

4. While you're still waiting for the pasta to cook, combine all of the dressing ingredients together in a small bowl. You could adjust the flavours to taste, however I thought this was perfect for me.

5. Once the pasta is soft, drain the water and pour the pasta into a bowl. Pour the dressing over top and stir until the pasta is well coated.

6. Remove the broccoli from the heat and pour it out on top of the pasta. Finally sprinkle the nutritional yeast on top along with the black pepper. Once again, stirring everything together until well coated.

This recipe has quickly become a lunch time favourite of mine as I'm just obsessed with the flavours!
