Creamy Cajun "Chicken" Pasta | VEGAN

If you love super quick and easy recipes, then this one is for you. Today I wanted to create something using minimal ingredients for someone who doesn't want to spend too long in the kitchen and a meal that could become a simple staple weekday meal! I know a lot of people love quick recipes as not all of us have the time on our hands, so this recipe is really ideal as you'll probably find you have most of the ingredients needed in your cupboards already and it can be whipped up in just 15 minutes!

Just because this recipe is simple, doesn't mean that it lacks flavour. The cajun style "chicken" is my favourite part of the recipe, as it bulks it up a bit and the flavours are just incredible. 

I also used my absolute favourite cream cheese by Bute Island in this recipe to create the most perfect creamy tomato sauce. I've teamed up with Bute Island Foods on several recipes now and their huge range of vegan cheese is just amazing.

This recipe also proves that just because it's quick, it doesn't mean its not delicious!

- CREAMY CAJUN "CHICKEN" PASTA - 

Serves: 2   Prep Time: 5 mins   Cook Time: 10 mins

You will need:

- 80g penne pasta

 - 1 tbsp olive oil

- 1/4 onion, diced

- 1/2 tsp garlic

- 80g vegan chicken pieces (I used Fry's Family "chicken" style pieces)

- 2 1/2 tsp cajun seasoning

- 3/4 tin chopped tomatoes

- 2 tbsp Bute Island original cream sheese

- salt and pepper, to taste

- chives, for topping, optional


Method - 

1. Fill a medium sized saucepan with water and bring to the boil before adding the pasta. Leave this to cook on medium heat for 10 - 15 minutes, until the pasta is soft. While the pasta is cooking, make the sauce.

2. To make the sauce, add the olive oil to a large frying pan with the diced onion and garlic.

3. To the same pan, add the chicken style pieces and fry these together for 3 - 4 minutes. 

4. Sprinkle the cajun seasoning on top of the chicken style pieces and stir everything together so that the pieces are well coated.

5. Add the chopped tomatoes and stir in the cream cheese until completely combined. Make sure the cream cheese is well incorporated as you don't want any chunks. 

6. Add some salt and pepper to taste. I usually add a very tiny amount of salt, but add around 1/2 tsp of pepper, however it's up to you.

7. At this point the sauce should be well heated and the pasta should be soft. Check that the pasta is cooked and drain it. Once drained, add the pasta to the sauce mix and stir everything together until the pasta is completely coated in the tomato sauce. 

8. Add some chopped fresh chives on top (optional) and serve the pasta up into two separate bowls.
