Pistachio & Chocolate Chip Cookies | Vegan

Okay, so these cookies have become a new obsession. They're SO good. I've been working on perfecting the perfect vegan cookie for what feels like forever, but somehow they never turn out the way I plan, however, these cookies may just be it. I personally love cookies with a soft centre but are still slightly crisp on the outside and the consistency of these is just amazing. I hope you love them too!

I personally can't choose between these pistachio and chocolate chip cookies and the s'mores cookies, all I know is that eating a big batch of either of them in one sitting would not be hard - hold me back, please.

You could use vegan chocolate chips in this recipe like I have (my favourite chocolate chips are from Moo Free) or you could easily just chop up your favourite chocolate bar and use chocolate chunks instead.


- PISTACHIO & CHOC CHIP COOKIES - 

Makes: 12   Prep Time: 10 mins   Cook Time: 15 mins

You will need:

- 1 3/4 cups plain flour

- 1 tsp baking powder

- 1/2 cup melted vegan butter

- 3/4 cups light brown sugar

- 1/2 cup caster sugar

- 2 vegan eggs (I use Orgran egg replacement)

- 1 tsp vanilla extract

- 1/4 cup pistachios 

- 1/4 cup vegan chocolate chips


Method - 

1. Preheat the oven to 180C and line two baking trays with parchment paper.

2. In a stand mixer / larger bowl, sieve the plain flour and add the baking powder. Mix to combine.

3. Melt the butter and pour it out into a medium-sized bowl. Add the light brown sugar, caster sugar, vanilla extract and vegan eggs. Mix everything together until completely combined.

4. Add the wet ingredients to the dry ingredients, once again mixing until everything is combined. The mixture should be a soft cookie dough texture.

5. Fold the pistachios and chocolate chips into the mixture. 

6. Use your hands or a tablespoon to scoop out the mixture and roll the dough into 12 balls (or 8 if you want them bigger). Space these out a fair amount on both baking trays as the cookies will grow a lot. 

7. Place the cookies in the oven for 15 minutes until they turn golden. Once cooked, they will still be very soft but will harden as they cool. Allow them to cool for at least 10 minutes.
