Soft & Chewy S'mores Cookies | Vegan

Happy Saturday everyone! I can't believe we're already a week into February! Which means we're slowly but surely getting closer to warmer days and (hopefully) even closer to getting out of this lockdown.

I know a lot of people have enjoyed brushing up on their baking skills during these lockdowns, I've seen banana bread loaves all over my social media since March last year and they're still going strong. So, if like myself, you're getting a bit bored of making banana bread, then why not try out these s'mores inspired cookies using vegan marshmallows and dark chocolate?! They're seriously so delicious.

- VEGAN CHEWY S'MORES COOKIES - 

Makes: 8  Prep Time: 15 mins  Cook Time: 15 mins

You will need:

- 1 3/4 cups plain flour
- 1 tsp baking powder
- pinch of salt
- 1/2 cup melted vegan butter
- 3/4 cups light brown sugar
- 1/2 cup caster sugar
- 2 vegan eggs (I use Orgran egg replacement)
- 1 tsp vanilla extract
- 10 vegan marshmallows, chopped into quarters (or a handful of mini marshmallows)
- 1/2 a bar of vegan dark chocolate, chopped into small chunks

Method - 

1. Preheat the oven to 180C and line two baking trays with parchment paper.

2. In a stand mixer / large bowl, sieve the flour and add the baking powder and salt. Mix to combine.

3. Pour the melted butter out into a medium-sized bowl. Add the light brown sugar, caster sugar, vanilla extract and vegan eggs. Mix everything together until fully combined.

4. Add the wet ingredients to the dry ingredients, once again mixing until everything is combined. The mixture should be a soft cookie dough texture.

5. Fold the chopped marshmallows (or mini marshmallows if using) and the dark chocolate chunks into the mixture.

6. Use your hands or a tablespoon to scoop out the mixture and roll the dough into eight balls. Space these out a fair amount on both baking trays as the cookies will grow a lot. 

7, Place the cookies in the oven for 15 minutes until they turn golden. Once cooked, they will still be very soft but will harden as they cool.

As the cookies are fairly large you could always try and make double with the same amount of mixture to make smaller versions!
