Cinnamon Sugar Croffles

If you haven’t tried croffles yet (a croissant waffle) then you absolutely must!

If you're confused as to what a croffle is, it is simply a combination of a croissant placed in a waffle machine to create a waffle effect. Topped with cinnamon sugar, cream and fresh berries. It's a delicious indulgent breakfast or dessert!

You only need a handful of ingredients, it’s so simple!

I used ready-made croissants, but if you had more time on your hands and were up for it, you could always make your croissants from scratch. I used St Pierre vegan croissants on this occasion, but La Boulangère also makes great ones. 

- CINNAMON SUGAR CROFFLES -

You will need:

- 6 ready-made vegan croissants 
- 1 tbsp vegan butter
- 2 tbsp granulated sugar
- 1 tbsp cinnamon
- 250ml dairy-free double cream 
- 3 tbsp icing sugar
- 1 tsp vanilla extract
- fresh raspberries
- fresh blueberries
- Extra icing sugar, for dusting

Method:

1. Melt the butter in a mug in the microwave for 30 seconds.
2. In a bowl combine the granulated sugar with the cinnamon.
3. Once the butter has melted, brush a croissant with some of the butter and sprinkle some of the cinnamon sugar on top.
4. Place the croissant in a waffle maker for around 1 minute, until warm.
5. Repeat until all the croissants are ready.
6. Pour the double cream into a mixing bowl and mix until whipped (ideally with a hand mixer as it’s a lot quicker).
7. Sieve the icing sugar into the bowl and add the vanilla extract. Mix again.
8. Scoop the whipped cream into a piping bag and add it on top of each croffle.
9. Add some fresh raspberries and blueberries on top and finally a dusting of icing sugar.
