These blueberry and white chocolate crumble cookies have got to be one of my favourite cookie recipes! They’re soft, sweet and have a little crunch from the crumble topping.
The crumble topping is optional; however, I strongly recommend it, as it adds a delicious mixture of textures. Adding a crumble topping to cookies and loaf cakes is very common for me; I just love it!
Although I used frozen blueberries in this recipe, I recommend using fresh blueberries so they don't dye the cookies purple. As the frozen blueberries will have more moisture, the colour will leak. If you don't really care what they look like, then feel free to use either! Both work fine, and the outcome is still delicious either way.

- BLUEBERRY AND WHITE CHOCOLATE CRUMBLE COOKIES -
Makes 12 cookies
You will need:
- 1/2 cup dairy-free butter
- 1/2 cup caster sugar
- 1/2 cup brown sugar
- 1 flax egg (1 tbsp flaxseed + 3 tbsp water)
- 1 tsp vanilla extract
- 1 1/2 cups plain flour
- 1 tsp baking powder
- 1 cup blueberries (fresh or frozen is fine)
- 1/2 cup dairy-free white chocolate chips
For the crumble:
- 2 tbsp dairy-free butter
- 2 tbsp caster sugar / granulated sugar
- 2 tbsp brown sugar
- 1/3 cup plain flour
Method:
1. Preheat the oven to 180°C and line two baking trays with parchment paper.
2. In a large mixing bowl, combine the vegan butter with the caster sugar and brown sugar.
3. Add the vanilla extract and flax egg and mix again.
4. Add the flour and baking powder and mix until a smooth cookie dough has formed.
5. Fold in the blueberries and white chocolate chips.
6. Roll the cookie dough into 12 balls and place them on the baking trays, separating them enough as they will expand.
7. In a separate bowl, add all of the crumble ingredients and use your fingers to create a fine crumb.
8. Sprinkle the crumble mixture on top of each cookie.
9. Bake the cookies for 15 minutes.
10. The cookies will be very soft once removed from the oven, so allow them to cool completely before enjoying.
