Halloween Spider Protein Balls

I love making protein balls; they're such a fun little no-bake snack to make, and you can be as creative as you like with them! My family absolutely love it when I whip up a batch of protein balls, so these were a fun little Halloween surprise for them.

Protein balls are so easy to make and usually always use ingredients that you have in the cupboards already, but you can still be creative with them! So, you can swap out most ingredients for those you already have. For example, if you don't have maple syrup, you can use agave syrup or date syrup. Or if you don't have peanut butter, you can substitute it for literally any other nut butter, whether that be almond, cashew or hazelnut; however, this will obviously alter the taste.

- HALLOWEEN SPIDER PROTEIN BALLS -

You will need:

- 1 1/2 cups oats
- 1/4 cup vegan caramel protein powder
- 1/2 cup smooth peanut butter
- 1/4 cup maple syrup
- 1/3 cup oat milk
- a handful of pretzel sticks
- 300g dairy-free chocolate chips
- 1 tsp coconut oil
- 24 edible eyes

Method:

1. Simply mix all of the ingredients together, excluding the chocolate chips.
2. Divide the mixture into 12 balls.
3. Place the protein balls on a lined baking tray in the freezer for 10 minutes.
4. Break the pretzel sticks into smaller pieces and place four on each side of the protein ball to create spider legs.
5. Melt the chocolate and coconut oil in a bowl in the microwave in 30-second bursts, stirring in between until completely melted.
6. Place two edible eyes on each spider and place the protein balls back on the baking tray in the freezer for 30 minutes, until set.
7. Once set, remove from the freezer and enjoy!

Keep them stored in an airtight container in the fridge.
