Vegan Marble Pumpkin Brownies

Is it just me, or is baking with pumpkin just more exciting? I seriously can't get enough! These marble pumpkin brownies have certainly become a new favourite of mine, beating most brownie recipes I've tried or come up with by a mile.

These are like an autumnal dream and served with a hot cup of coffee is just PERFECT.

Rather than me rambling on, let's just get straight to the recipe ...

- MARBLE PUMPKIN BROWNIES -

Makes: 9   Prep Time: 15 mins  Cook Time: 30 mins

You will need:

- 1/2 cup vegan butter
- 2 flax eggs
- 1 cup pumpkin puree
- 1 cup light brown sugar
- 2 cups self raising flour
- 1 tsp baking powder
- 1 1/2 tsp vanilla extract
- 1 bar of dark chocolate (my favourite brand is NOMO)
- handful of dark chocolate chips (plus more for topping)

Method:

1. Preheat the oven to 180C.

2. Make the flax eggs by combining two tablespoons of flax seeds with six tablespoons of water. Stir it together and place in the refrigerator for 10 minutes while you prepare everything else.

3. Place the butter and light brown sugar into a small saucepan on low heat. Keep stirring so it doesn't burn, but wait until the butter has completely melted. Pour in the vanilla extract and stir. Remove from the heat and set aside.

4. In a large mixing bowl. sieve the self raising flour and add the baking powder, flax eggs and pumpkin puree, stir until combined. Add the wet ingredients to the dry ingredients and keep stirring until there are no lumps and is completely well combined.

5. Pour a handful of dark chocolate chips into the mixture and fold them in with a wooden spoon / spatula.

6. Line a baking tin with parchment paper and pour in the brownie mixture. Use a spatular to flatten it out and spread it evenly.

7. Melt a bar of dark chocolate in a saucepan on low heat, continuously stirring it so it doesn't burn. Once it has completely melted, pour the chocolate onto the brownies in small sections, dotting it around however you want.

8. Use a skewer or tooth pick and swirl the chocolate into the brownies to create the marble effect. If you want even more chocolate (who doesn't?!) you could top the brownies off with some extra chocolate chips, sprinkling them around randomly. If you had vegan white chocolate chips, this would be just as delicious!

9. Place the brownies in the oven for 30 minutes. Remove from the oven and check that they are completely cooked all the way through, by placing a skewer through the middle of them. If the skewer comes out clean then they are done. If not then place them back in the oven for an extra five minutes.

10. Once the brownies are done, leave them to cool for at least 15 minutes before cutting them!
