Healthy Blueberry Muffins | Vegan

I'm sure we've all been seeing endless amounts of banana bread all over our Instagram feeds during all of these lockdowns (I'm not complaining, I love me a banana bread loaf) but, if like me you want to experiment with some other recipes, then I highly recommend these delicious blueberry muffins! I personally love healthier baked goods as sugary treats can often give me headaches, but don't get me wrong, I still enjoy them from time to time! 

These are also great to take on the go and for breakfast! 

- HEALTHY BLUEBERRY MUFFINS -

Makes: 10  Prep Time: 10 mins  Cook Time: 30 mins

You will need: 

- 1 cup dairy-free plain yoghurt

- 2 flax eggs (2 tbsp flax seeds, 6 tbsp water)

- 1/4 cup vegan butter, melted

- 1/2 cup maple syrup 

- 1/2 tsp vanilla extract

- 1 tbsp oat milk

- 1 3/4 cups self-raising flour

- 1 tsp cinnamon

- 1/4 tsp salt

- 1 cup fresh blueberries

Method - 

1. Preheat the oven to 200C and line a muffin tin with 10 silicone muffin cases. 

2. In a large bowl, combine the dairy-free yoghurt, flax eggs, melted vegan butter (microwave the butter in a mug for 30 seconds to melt), maple syrup, vanilla extract and oat milk. Mix everything together until smooth either using a stand mixer or by hand.

3. To the same bowl, sieve the self-raising flour. Add the cinnamon and salt. Mix until well combined and there are no lumps of flour.

4. Rinse and dry the blueberries before folding them into the mixture.

5. Scoop out the mixture into the 10 silicone muffin cases, fill them 3/4 of the way as they will grow.

6. Place the muffins in the oven for around 30 minutes, until they are golden brown and a toothpick comes out clean. 

7. Allow the muffins to cool completely before enjoying them!
