Sticky Lemon "Chicken" | Vegan

If you're in need of some meal inspo, then I highly, HIGHLY suggest trying out this delicious sticky lemon "chicken" using whatever vegan chicken pieces you like most, or you could even use tofu. This is such a delicious dish and only takes a total of 15 minutes to whip up - who doesn't love a quick and easy meal?!

This has such a perfect balance of flavours, with sweetness from the lemon and maple syrup, but balanced out with the saltiness of the soy sauce. It's just so yummy!


 - STICKY LEMON "CHICKEN" -

Serves: 1  Prep Time: 5 mins   Cook Time: 10 mins

You will need:

- 125g chicken style pieces (my favourite is Fry's Family chicken-style strips)

- 1/2 tbsp light soy sauce

- salt & pepper, to taste

- 4 tbsp cornflour


- 1 tbsp vegetable oil 

- 2 tsp garlic

- 1 tsp ginger

- 4 tbsp water

- 4 tbsp lemon juice

- 1/2 vegetable stock cube

- 2 tbsp maple syrup

- 1/2 tbsp soy sauce

- 2 tsp cornflour


Method:

1. In a medium-sized bowl, add the vegan chicken pieces and coat them in 1/2 tbsp soy sauce. Add the salt and pepper to taste, I usually do around 1/4 tsp salt and 1/2 tsp pepper. Mix this around and then add the cornflour, stirring so that the chicken is fully coated.

2. In a frying pan, add the vegetable oil. Throw in the flavoured vegan chicken pieces and keep this on medium heat. 

3. In a small bowl, combine the garlic, ginger, water and lemon juice. Crumble the vegetable stock cube into the mix and stir to combine. Pour in the maple syrup and soy sauce and adjust the flavours to taste. 

4. Add the sticky lemon mixture into the pan with the vegan chicken and sprinkle the cornflour into the pan. Use a spoon/spatular to coat the chicken in the cornflour and sticky lemon mixture. Cook everything for a further 5 minutes (or depending on how long your vegan chicken pieces usually take to cook).

5. Once cooked, remove the sticky lemon chicken from the heat and serve it up alongside some rice. I then topped mine with a sprinkle of sesame seeds and chopped spring onion.
