Chilli Lime "Chicken" Tacos | Vegan

If you need some quick meal inspiration, then this recipe is for you. You can prep and cook these delicious chilli lime "chicken" tacos in under 15 minutes and you won't be disappointed! they're packed full of flavour and even have a spicy little kick to it with the help of my favourite chilli oil from Banhoek Chilli Oil.

I used vegan Quorn pieces in these tacos as the meat substitute, however, you can use whatever vegan chicken replacement you like or you could even use tofu or keep it simple with just vegetables!

I also topped these tacos with a little bit of vegan mayonnaise, but I imagine salsa would also be a great choice!

- CHILLI LIME "CHICKEN" TACOS -

Makes: 2 tacos  Prep Time: 5 mins  Cook Time: 10 mins

You will need:

- 2 mini tortilla wraps
- 100g vegan Quorn pieces (or another chicken substitute)
- 1/2 red bell pepper, chopped into small chunks
- 2 spring onions, chopped
- 1/2 tsp onion granules
- 1/2 tsp garlic granules
- 1/4 tsp paprika
- 1/4 tsp black pepper
- pinch of salt
- juice of 1/2 a lime
- small handful of rocket or other salad leaves, optional 

Method:

1. Preheat the oven to 200C. Chop up the red bell pepper and spring onions.

2. In a medium-sized frying pan, add the chilli oil. Place the pan on medium heat and throw in the veggies and the vegan chicken.

3. Allow everything to cook for around 5 minutes before adding the dried onion granules, dried garlic granules, paprika, salt and pepper. Stir everything so that the flavours coat everything. Squeeze the juice of half a lime into the pan and stir everything once again. Keep on low heat for a further 5 minutes.

4. Warm up the tortilla wraps in the oven and allow them to crisp for around 4-5 minutes. To keep them in a taco shape, I turned a cupcake tray upside down and placed the tortillas in between the gaps of the cupcake tin. This will hold the shape of the taco.

5. Once the tortillas have crisped slightly, remove them from the oven and place them on a plate. Add the rocket/salad leaves to the tortillas. By this time everything else should be cooked so remove the pan from the heat and serve up the chilli lime "chicken" and veggies into each tortilla shell. Top with your favourite vegan mayonnaise or salsa!
