Pink Marshmallow & White Chocolate Chip Cookies | Vegan

Pink cookies?! omg. These cookies are seriously delicious and you most definitely need them in your life, not to mention just how pretty they are!

With the mix of white chocolate chips and gooey marshmallow, these cookies have the most perfect texture. Plus the addition of pink pitaya powder from Unicorn Superfoods for the gorgeous pink colour.

These cookies are great for all occasions, so why not whip up a batch and share them with your loved ones? (unless you plan on eating them all yourself, which in that case I'm not judging, they're way too good)

Makes: 12  Prep Time: 10 mins  Cook Time: 15 mins

You will need:

- 1 3/4 cups plain flour
- 1 tsp baking powder
- 3 heaped tbsp pink pitaya powder from Unicorn Superfoods
- pinch of salt
- 1/2 cup vegan butter, melted
- 3/4 cups light brown sugar
- 1/2 cup caster sugar
- 2 vegan eggs (I used Orgran egg replacement or Free & Easy Foods egg replacement)
- 1 tsp vanilla extract
- 1/4 cup mini vegan marshmallows (I use the mini mallows from Freedom Mallow)
- 1/4 cup vegan white chocolate chips

For Topping:

- 1/4 cup vegan white chocolate chips / white chocolate bar

1. Preheat the oven to 180C and line two baking trays with parchment paper.

2. In a stand mixer/large mixing bowl, sieve the flour and pink pitaya powder and add the baking powder and salt. Mix to combine.

3. Melt the butter (I usually add the butter to a mug and microwave it for 40 seconds). Pour the melted butter out into a medium-sized bowl. Add the light brown sugar, caster sugar, vanilla extract and vegan eggs. Mix everything together until fully combined.

4. Add the wet ingredients to the dry ingredients, once again mixing until everything is combined. The mixture should be a soft cookie dough texture.

5. Fold the white chocolate chips and vegan marshmallows into the mixture.

6. Use your hands or a tablespoon to scoop out the mixture and roll the dough into 12 balls. Space these out a fair amount on both taking trays as the cookies will grow.

7. Place the cookies in the oven for 15 minutes. Once cooked, they will still be very soft but will harden as they cool.

8. Once the cookies have cooled completely, you can then melt the vegan white chocolate chips/bar. I usually add the chocolate chips to a small bowl and melt them in the microwave for 20 seconds at a time, stirring after every 20 seconds and then placing them in the microwave again for a further 20 seconds until completely melted. Use a teaspoon to then drizzle the melted white chocolate over each cookie.

I hope you love these cookies as much as I do!

What's your favourite cookie flavour?

Love Always,
