4-Ingredient Stuffed Dates | Vegan


If you're looking for a super quick and easy snack idea, then this one's for you! These stuffed dates taste just like a snickers bar, but with a healthier, vegan twist! All it takes is four ingredients and very little hassle (no baking involved) and you've got yourself a delicious sweet treat. 

All you need is:

- A handful of medjool dates

- Smooth peanut butter

- Vegan dark chocolate

- a small handful of vegan salted pretzels


1. Simple slice the dates down the middle and remove the seed. Use as many dates as you like (I used around 7 so I had enough for the week).

2. Stuff the dates with the smooth peanut butter by scooping the peanut butter into the date with a teaspoon. 

3. Add the salted pretzel in the middle of the date on top of the peanut butter.

4. Melt some vegan dark chocolate in the microwave for about 35 seconds. Stir and then drizzle the melted chocolate over the top of each date.

5. Place the dates in the fridge for about 2 hours (or the freezer for 15 minutes) to allow the chocolate to set and enjoy!

Keep the stuffed dates stored in an airtight container in the fridge.

I absolutely love snacking on these and you can come up with lots of variations for this snack, for example, stuffing the dates with cookie dough!
