Carrot Cake Protein Bites | No Bake | Vegan

If you fancy a healthier sweet treat then these carrot cake protein bites are perfect!! they’re full of flavour and coated in white chocolate and some extra milk chocolate on top (vegan of course) to make them even more delicious.

I also used my absolute favourite vegan vanilla protein powder from Unicorn Superfoods. It has a great flavour and doesn't have a strange aftertaste unlike a lot of vegan protein powders I have tried in the past.

These carrot cake protein bites are so easy to make and I usually find myself making them almost every week (with different flavour combinations), but after trying this new carrot cake flavour, I think these have quickly become a favourite of mine! 

You will need:

- 1 cup of oats
- 1/2 cup Unicorn Superfoods vanilla cake protein powder
- 3 tsp cinnamon
- 2 tsp nutmeg
- 1/2 cup carrots, grated
- 5 tbsp maple syrup
- 1/4 cup smooth peanut butter
- 1/2 cup vegan white chocolate
- 1/4 cup vegan milk chocolate

Method:

1. In a large bowl, add the oats, protein powder and spices. Stir to combine.
2. Add the grated carrots, maple syrup and smooth peanut butter and mix again until well combined.
3. Roll the mixture into 8 balls.
4. Melt the white chocolate in the microwave in 35-second bursts, mixing in between.
5. Roll each protein ball in the melted white chocolate and place them on a plate. Place the plate in the freezer for 10 minutes.
6. *optional* melt the vegan milk chocolate in the microwave in 35-second bursts, stirring in between. Once melted, drizzle over each of the protein balls.
7. Place the protein balls back in the freezer for a further 10 minutes and enjoy.

Store them in an airtight container in the fridge!
