"Peanut Butter" Marshmallow Ice Cream

Everyone loves ice cream, right? but have you ever tried making it? with peanut butter? orrrr, have you ever tried making it with p'not butter? I used Crave Free From's P'not butter which is made out of sunflower seeds, but tastes identical to peanut butter, to create this delicious ice cream, with the addition of marshmallows, chocolate cake and dairy free chocolate buttons. It's a real treat!

This recipe is also of course dairy-free, gluten-free, nut-free and completely vegan!

- "PEANUT BUTTER" MARSHMALLOW ICE CREAM - 

You will need:

1 cup dairy-free milk
1/2 cup granulated sugar
1 cup vegan double cream
1/2 cup Crave Free From P’not butter
4 small vegan gluten-free chocolate cake bars
Handful of vegan marshmallows
Handful of dairy-free chocolate buttons

Method:

1. Freeze the bowl of the ice cream maker overnight (directions may differ depending on your ice cream maker).
2. In a separate bowl, mix the dairy-free milk and sugar together.
3. Pour in the double cream and whisk again.
4. Place the bowl of the ice cream maker into the machine.
5. Pour the mixture into the bowl and switch it on. Allow the ice cream to churn for at least 25 minutes. This should make a perfect soft serve.
6. Add the p’not butter to the ice cream and churn for a further 5 minutes.
7. Chop the cake bars, marshmallows and chocolate buttons into small chunks. Add them to the machine and allow them to fold into the ice cream.
8. Switch the ice cream maker off and serve!

You can place any remaining ice cream into a freezer-safe container and enjoy it whenever you fancy it!
