Blueberry, Banana & White Chocolate Loaf | Vegan


This is one of the best flavour combinations! I adore white chocolate, but paired with blueberry and banana, it's a dream! 

I added some protein powder to this loaf, but if you don't have this on hand you could always add more flour instead. I find that the protein powder not only obviously adds more protein, but it adds more flavour, so I would recommend adding it.

You will need:

- 3 ripe bananas
- 1/2 cup coconut oil, melted
- 1/3 cup caster sugar
- 1 cup self-raising flour
- 1/4 cup vanilla protein powder
- 1 tsp bicarbonate soda
- 1/4 cup fresh blueberries
- large handful of vegan white chocolate


1. Preheat the oven to 180C and line a loaf tin with parchment paper.
2. In a large mixing bowl, mash the bananas, and add the melted coconut oil (place in a microwave-safe bowl and melt for 35 seconds).
3. Add the caster sugar, self-raising flour, vanilla cake protein, and bicarbonate soda. Mix until smooth.
4. Fold the blueberries and chopped white chocolate into the mixture.
5. Scoop the mixture into the loaf tin, and bake for 50-60 minutes.
6. Allow the loaf to cool for about 1 hour before slicing.
