Banana Biscoff Loaf | Vegan


This flavour combo is going to steal your heart. 

The recipe is simple, delicious, and has added protein! I used a speculoos protein powder, however, you could use a caramel or vanilla flavour (but possibly add some more biscoff spread!)


You will need:

- 3 ripe bananas
- 1/2 cup coconut oil, melted
- 2 tbsp Biscoff spread
- 1/3 cup caster sugar
- 1 cup self-raising flour
- 1/4 cup speculoos protein powder
- 1 tsp bicarbonate soda


1. Preheat the oven to 180C and line a loaf tin with parchment paper.
2. In a large mixing bowl, mash the bananas, add the melted coconut oil (place in a microwave-safe bowl and melt for 35 seconds), and Biscoff spread and mix to combine.
3. Add the caster sugar, self-raising flour, speculoos protein, and bicarbonate soda. Mix until smooth.
4. Scoop the mixture into the loaf tin and bake for 45-50 minutes.
5. Allow the loaf to cool for at least 20 minutes before slicing. I also topped mine with some more melted Biscoff and some biscuit crumbs!
