Apple desserts are some of the most comforting during autumn, so I had to share these super-easy apple turnovers with you!
They use premade puff pastry to make them easier and quicker to make! The ingredients are simple and the recipe is of course dairy-free, egg-free free and vegan-friendly (just check the ingredients on your puff pastry, most in the UK are accidentally vegan)
The apple turnovers are also delicious served with a scoop of ice cream!
You can find more of my recipes over on my Instagram @veganshannon, as well as the video on how to make this recipe.
- EASY APPLE TURNOVERS -
You will need:
- 1 sheet of puff pastry
- 400g peeled and chopped apples
- 2 tbsp dairy-free butter
- 30g brown sugar
- 1 tsp vanilla extract
- 1 tbsp cinnamon
- 2 tbsp plain flour
- 1 tbsp dairy-free milk
- 6 tsp white sugar
Method:
1. Preheat the oven to 180C.
2. Roll out a sheet of puff pastry and cut it into 6 squares.
3. Peel and chop the apples into small pieces.
4. Melt the butter in a large pan on low heat.
5. Once melted, add the apples, vanilla extract, cinnamon and brown sugar and cook on medium-low heat for about 8 minutes until the apples have softened.
6. Add the plain flour and cook until the sauce has thickened.
7. Divide the apples between the centre of each puff pastry square. Fold one corner of the pastry over to the opposite corner and use a fork to seal it.
8. Brush each pastry with milk and sprinkle some sugar on top.
9. Bake for 25 minutes or until golden and serve warm.
