Calling all Gilmore Girls fans! These pumpkin pancakes are inspired by Luke's pumpkin pancakes topped with homemade cinnamon butter, and they are absolutely delicious. If I'm completely honest, they are without a doubt the best stack of pancakes I have ever made! The flavours are just incredible.
This stack is perfect for Autumn! Bonus points if you make and eat them while watching Gilmore Girls and paired with a cup of coffee.

I usually reach for soy milk or oat milk to make these pancakes, but any will work!
The ground cinnamon, nutmeg, and ginger bring out those warm autumn and winter flavours, making this stack feel 10 times more cosy!
The cinnamon butter is so easy to make and only requires 4 simple ingredients! You can use this on all sorts of things, as well as these pancakes. How about trying it on a slice of pumpkin bread or banana bread? DELICIOUS.
- PUMPKIN PANCAKES WITH CINNAMON BUTTER -
You will need:
- 100g pumpkin puree
- 220ml dairy-free milk
- 1 tsp vanilla extract
- 170g self-raising flour
- 1 tsp baking powder
- 20g caster sugar
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp ginger
For the cinnamon butter:
- 35g dairy-free butter
- 10g agave syrup/maple syrup
- 1 tsp cinnamon
- 35g icing sugar
- Maple syrup, for topping
Method:
1. Combine the pumpkin puree, dairy-free milk, and vanilla extract in a mixing bowl.
2. Add the self-raising flour, baking powder, caster sugar and spices to the bowl and mix until well combined.
3. Grease a non-stick pan with a little bit of butter or oil on medium heat. Once hot, add a scoop of batter.
4. Cook each pancake for about 1 minute on each side (when bubbles appear, they are ready to flip). This should make about 5 pancakes.
5. Make the cinnamon butter by mixing all of the ingredients together.
6. Scoop the cinnamon butter (or use a piping bag to make it prettier) on top of the stack of pancakes.
7. Finally, drizzle some maple syrup on top and enjoy!
