These pumpkin chocolate chip baked oats are so easy to make and they only require a handful of ingredients (8 to be exact) that you may already have lying around in the cupboards!
I love using dark chocolate chips in this recipe, but dairy-free white chocolate or milk chocolate would also work perfectly.
I added protein powder to mine; however, if you decide to not use this, then just add an extra 25g of oats! In terms of protein powder flavours, vanilla always works well! But caramel or something similar would be delicious too!
You can use regular oats or oat flour in this recipe (as we will be adding the ingredients to a blender for a smooth finish anyway!)
If you would rather not add peanut butter, that is absolutely fine! Feel free to skip this :)
This recipe is made in 5 simple steps for a super simple breakfast (or dessert, because why not).
- PUMPKIN CHOCOLATE CHIP BAKED OATS -
You will need:
- 50g oats
- 25g vanilla protein powder
- 1 tsp baking powder
- 40g pumpkin puree
- 1 tsp peanut butter, optional
- 2 tsp agave syrup
- 125ml oat milk
- Large handful of chocolate chips
Method:
1. Preheat the oven to 180C.
2. Add everything but the chocolate chips to a blender and mix until smooth.
3. Pour the mixture into a ramekin or small ovenproof dish.
4. Fold a small handful of chocolate chips into the oats.
5. Top the oats with more chocolate chips before placing the ramekin in the oven for 25 minutes.
