If you want a slightly healthier baked treat, then you’ve got to try these peanut butter and jam baked doughnuts using vanilla protein powder. The jam makes them slightly gooey, and the flavours are amazing. I hope you love them as much as I do!

- PB&J Baked Doughnuts -

Serves: 6

You will need:

- 3/4 cup plain flour
- 1 tsp baking powder
- 1/4 cup vegan vanilla protein powder
- 1/4 cup granulated sweetener
- 1 tsp vanilla extract
- 2 tbsp apple sauce
- 1 tbsp vegan butter
- 1/2 cup unsweetened oat milk
- 4 tbsp smooth peanut butter
- Raspberry jam

Method:

1. Preheat the oven to 200C.
2. In a large mixing bowl, combine the flour, baking powder, vanilla protein powder and sweetener.
3. Melt the butter in a bowl in the microwave for about 25 seconds.
4. Pour the melted butter into the bowl with the dry ingredients. Add the oat milk and stir until well combined.
5. Add the peanut butter and mix again.
6. Lightly spray the doughnut tin with cooking spray and divide the mixture between the doughnut tin. My tin makes 6!
7. Swirl some raspberry jam into each doughnut before placing them in the oven (around 1 tsp per doughnut).
7. Place in the oven for 12-15 minutes. Once cooked place the donuts on a cooling rack and allow to cool.
