Carrot Cake Protein Bars | Vegan



If you love carrot cake flavour then you will love these no-bake carrot cake chocolate protein bars!

With three delicious layers including an oat carrot cake flavoured base, a thick layer of Biscoff in the middle and your favourite vegan chocolate on top (plus a sprinkle of walnuts) you will want to eat the entire batch. 


You will need:

For the base:

- 1/2 cup oat flour
- 1/3 cup carrot cake protein powder
- 1/4 cup Biscoff spread
- 1/3 cup unsweetened oat milk

Middle layer:

- 1/2 cup Biscoff spread

Third layer:

- 1 cup dairy-free chocolate
- sprinkle of chopped walnuts


1. Combine the oat flour and protein powder in a mixing bowl. Melt the biscoff spread in the microwave for 35 seconds and pour into the mixture. Add the oat milk and mix again. The texture should be soft.
2. Spread the mixture into a lined loaf tin. Push it down into the edges and create a smooth even layer.
3. Melt the biscoff spread in the microwave for 35 seconds and pour on top of the base. Spread it out so that the base is completely covered.
4. Place the tin in the freezer for 15 minutes.
5. Melt the dairy-free chocolate in the microwave in 35-second bursts, stirring in between.
6. Remove the tin from the freezer and pour the melted chocolate over the top.
7. Finally sprinkle the chopped walnuts on top and place back in the freezer for at least 30 minutes. Cut into squares or slices!

Store in a container in the fridge!
