Banana Bread Baked Oats | Vegan

This has been of my favourite go-to baked oats recipes ever since jumping on the baked oats trend a few years ago. It's such a classic and I feel like everyone has to try this recipe at least once!

If you love banana bread, then there is no doubt that you will love these baked oats. They taste identical!

So if you have just 25 minutes to spare in the mornings, then give this one a go and let me know what you think!

You can find the video on how I made this along with more recipes on my Instagram @veganshannon

Serves: 1

You will need:

- 1 small banana
- 30g instant oats (oat flour)

- 1 tsp baking powder
- 1 tsp cinnamon
- 80ml oat milk
- 1 tsp vanilla extract
- Handful of chocolate chips
- 4 walnuts, chopped into small pieces

1. Preheat the oven to 200C
2. In a small bowl, mash the banana.
3. Add the instant oats, unflavoured soy protein isolate, baking powder, and cinnamon and mix to combine.
4. Add the oat milk and vanilla flavour drops and mix again until smooth.
5. Fold the chocolate chips into the mixture as well as the chopped walnuts.
6. Scoop the batter into a ramekin and place the ramekin in the oven for 25 minutes.
