These banana bread baked oats are perfect for meal prep! You can simply throw all of the ingredients into the same dish, mix and bake! Then slice into 4 and there you go, four days of breakfasts sorted while saving on time and washing up!
I used a vanilla protein powder in this recipe, however, you could switch it up with other flavours! Something like caramel would be delicious!
If you're not a fan of walnuts or almonds, you could switch these for something else too! Personally, I love pistachios or hazelnuts.
If you don't have agave syrup, you can substitute it for maple syrup or any other liquid sweetener.
- BANANA BREAD BAKED OATS -
Serves: 4
You will need:
- 2 medium ripe bananas- 1 1/4 cups gluten-free oats
- 1/4 cup vanilla protein powder
- 1 tsp nutmeg
- 2 tsp cinnamon
- 1 tsp baking powder
- 1 tsp vanilla extract
- 2 tsp agave syrup
- 1 cup coconut milk or other dairy-free milk
- 1 small bar of dark chocolate
- 1 large handful of walnuts
- 2 tbsp chopped almonds
Method:
1. Preheat the oven to 180C.
2. Mash the bananas in a medium-sized square baking dish.
3. Add the oats, protein powder, nutmeg, cinnamon, baking powder, vanilla, agave syrup and milk to the dish.
4. Mix the ingredients together until well combined.
5. Chop up the dark chocolate and walnuts into small pieces.
6. Fold them into the oats along with the almonds.
7. Top with some extra chopped almonds.
8. Place in the oven for 35 minutes.
9. Cut into 4 slices and serve warm.
If you’re meal prepping, divide the batch into 4 and place them in an airtight container in the fridge.
