These small-batch peanut butter and chocolate chunk cookies are perfect if you're not looking to spend much time in the kitchen! These cookies are so simple to make and can be baked in the air fryer for an even speedier bake!
They are dairy free, egg free and vegan friendly.

- SMALL BATCH PEANUT BUTTER AND CHOCOLATE CHUNK COOKIES -
Serves: 4
You will need:
- 1/3 cup vegan butter
- 1/4 cup caster sugar
- 1/4 cup brown sugar
- 1 flax egg (1 tbsp flaxseed + 3 tbsp water)
- 2 heaped tbsp smooth peanut butter
- 1 cup plain flour
- 1 tsp baking powder
- 1 bar vegan chocolate
Method:
1. In a bowl, combine the butter, caster sugar and brown sugar.
2. Add the flax egg and peanut butter and mix again.
3. Add the plain flour and baking powder and mix until a cookie dough forms.
4. Chop the chocolate into small chunks and fold them into the cookie dough.
5. Line the baking tray with parchment paper and roll the cookie dough into 4 balls.
6. Place the baking tray in the air fryer at 180°C for 8 minutes on the bake setting.
