Summer Strawberry & Lemon Cake Jars

This is the most delicious summer dessert! 

As it is officially strawberry season here in the UK, what better way to use up some delicious fresh strawberries than to make these cake jars!

The bottom of these summer strawberry and lemon cake jars / glasses are filled with chopped strawberries, layered with refreshing lemon cream and soft squares of vanilla sponge cake! You could even add some jam in there if you fancy it, and if you’re not a fan of lemon, you can easily make the cream vanilla flavoured instead.

This recipe is, of course, egg-free, dairy free and vegan friendly and is perfect for all summer occasions!

This can easily make around 8 glasses 🍓

- SUMMER STRAWBERRY AND LEMON CAKE JARS -

Serves: 8

You will need:

Vanilla sponge:


- 250g self-raising flour
- 1 tsp baking powder
- 220g caster sugar
- 120g dairy-free butter
- 145ml dairy-free milk
- 1 vegan egg (I used Crack'd egg replacer, but flax egg or aquafaba work too!)
- 1 tsp vanilla extract

For the lemon cream:

- 250ml dairy-free double cream
- 3 tbsp icing sugar
- Juice from 1/2 lemon
- Zest from 1 lemon

- 1 punnet of strawberries

Method:

1. Preheat the oven to 180C and line a square baking tin with parchment paper.
2. Add the self-raising flour, baking powder and caster sugar to a mixing bowl and whisk to combine.
3. Add the butter and milk to a saucepan on low heat, stirring until melted.
4. Pour the wet ingredients into the dry mixture and mix until combined. Pour in the egg replacement and vanilla extract and mix again.
5. Pour the mixture into the baking tin and bake for 25 minutes until a skewer poked through the middle comes out clean.
6. Allow the cake to cool completely before slicing into small cubes.
7. Pour the double cream into a large bowl. Whisk until light and fluffy. Add the icing sugar, lemon juice and zest and whisk again.
8. Chop the strawberries into small pieces and lay them at the bottom of the glasses. Scoop (or pipe) the cream on top. Add a few pieces of cake on top of the cream and add another layer of cream, as well as some extra strawberries and a slice of lemon for decoration.
