Baked Cinnamon Doughnuts | Vegan

If you want to make doughnuts from home, but don't know where to start, an easy way to make them is to make baked doughnuts! It's slightly healthier than deep frying them and is also a lot less hassle. 

I absolutely love these doughnuts as they're coated in a delicious cinnamon sugar. They're the perfect comforting dessert or snack alongside a cup of coffee!

- BAKED VEGAN CINNAMON DOUGHNUTS - 

Makes: 6 doughnuts

- 1 cup plain flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup light brown sugar
- 1 tbsp cinnamon
- 1 tsp vanilla extract
- 1 1/2 tbsp apple sauce
- 1/2 cup oat milk (or other non-dairy milk)
- 1 tbsp vegan butter

Topping:

- 2 tbsp vegan butter
- 1/2 cup light brown sugar
- 2 tbsp cinnamon

Method:


1. Preheat the oven to 200C.
2. In a large mixing bowl, combine the plain flour, baking powder, salt, light brown sugar and cinnamon.
3. Add the vanilla extract, apple sauce and oat milk. Melt the butter in a microwave-safe bowl for around 25 seconds. Pour into the mixing bowl and combine.
4. Lightly spray the doughnut tin with some cooking spray and then divide the mixture (my doughnut tin serves 6, but the mixture could stretch to 7-8 depending on how big you want them).
5. Place the doughnuts in the oven for 10 minutes. Once cooked allow to cool for 5 minutes.
6. For the topping, melt the vegan butter in the microwave for 25 seconds.
7. In a separate bowl, add the light brown sugar and cinnamon. Mix to combine.
8. Place the doughnuts on a cooling rack and brush them all over with the vegan butter. Roll the doughnuts in the cinnamon sugar and serve! they are best served warm!
