Cinnamon Banana Biscoff Pancakes | Vegan

If you've got those pancake cravings for breakfast (which happens to me on a regular basis) then you are going to want to try these comforting cinnamon, banana and biscoff pancakes!

They're soft and fluffy and topped with coconut yoghurt, banana, cinnamon and melted biscoff. 

I absolutely love biscoff spread so will use any excuse to add it onto pretty much anything. However, I really feel like it compliments the banana and cinnamon. You could even add some chocolate chips to the pancake batter if you fancied it! 

- CINNAMON BANANA BISCOFF PANCAKES -

You will need:

- 100g plain flour

- 3 tsp granulated sweetener/sugar

- 1 tsp cinnamon

- 150ml unsweetened oat milk

- 1 tsp vanilla extract


Topping:

- coconut yoghurt
- Banana
- 1 tbsp Biscoff spread
- extra cinnamon

Method:

1. In a bowl, combine the plain flour, sweetener/sugar, baking powder and cinnamon. 

2. Pour in the oat milk and vanilla extract and mix again.

3. Spray a large frying pan with some oil on low heat. Once hot, pour the mixture into the pan. Depending on the size of your pan, you could probably cook 2 - 4 pancakes at a time! The mixture should make 4 medium-sized pancakes as shown in the picture above.

4. Allow the pancakes to cook for a couple of minutes on each side (when bubbles appear, you know they are ready to flip). 

5. Melt the biscoff in a microwave-safe bowl for 25 seconds. 

6. Place the cooked pancakes on a plate and serve with coconut yoghurt, chopped banana, a sprinkle of cinnamon and the melted biscoff spread.
