Vanilla Sprinkle Baked Doughnuts | Vegan

You may have seen my cinnamon sugar baked doughnuts before, but here are my vanilla sprinkle baked doughnuts! both are incredibly delicious and take less than 30 minutes to make. They're healthier than deep-fried doughnuts and don't involve a lot of faff to make either!

- VANILLA BAKED VEGAN DOUGHNUTS - 

Makes: 6-8 doughnuts

You will need: 

- 1 cup plain flour
- 1 tsp baking powder
- 1/2 cup caster sugar
- 1/2 tsp salt
- 1 1/2 tbsp applesauce
- 2 tsp vanilla extract
- 1/2 cup oat milk (or other dairy-free milk)
- 1 tbsp vegan butter

Topping:

- 1/2 cup icing sugar
- 1 tbsp oat milk (or other dairy-free milk)
- pink food colouring
- vegan-friendly sprinkles

Method:

1. Preheat the oven to 200C.
2. In a large mixing bowl, combine the plain flour, baking powder, caster sugar and salt.
3. Add the applesauce, vanilla extract and milk. Melt the butter in a microwave-safe bowl for 25 seconds. Once melted, add to the mixing bowl and combine.
4. Lightly spray the donut tin with some cooking spray. Divide the mixture between the doughnut tin (mine serves 6, but the mixture could stretch to 7-8 depending on how big you want the doughnuts to be).
5. Place the doughnuts in the oven for 10 minutes. Once cooked, allow to cool for at least 5 minutes before icing.
6. To make the icing, simply add the icing sugar to a bowl. Add the milk and gradually add the pink food colouring.
7. Dip each doughnut into the icing and place them back onto a cooling rack. Add some vegan sprinkles and serve!
