Black Bean Tacos

These black bean tacos are so simple to make and are absolutely delicious! I've teamed up with MexGrocerUK to bring you this incredibly delicious recipe, using a handful of Mexican ingredients from their website https://www.mexgrocer.co.uk/

These tacos are baked instead of fried, so they are a bit healthier! They're full of flavour and have the most amazing texture from the soft black beans, juicy tomatoes and crispy tortillas.

- BLACK BEAN TACOS - 

You will need:


  • 1/2 red onion
  • 1 tsp garlic
  • 1 tbsp vegetable oil
  • MexGrocer La CosteƱa black beans
  • 1 tbsp MexGrocer Tajin seasoning
  • 3 tsp paprika
  • 2 tsp cumin
  • 1 large handful of cherry tomatoes
  • 5 @mexgroceruk La Fonda 15cm traditional tortillas
  • Vegan cheese
  • 1 large handful fresh coriander
  • 5 tbsp coconut yoghurt 
  • Juice from 1 lime
  • MexGrocer El Yucateco hot sauce 


Method:


  1. Preheat the oven to 200C and line a baking tray with parchment paper.
  2. Dice the red onion and garlic and quarter the tomatoes. 
  3. Add the vegetable oil to a large pan on medium heat. Add the onion and garlic and cook for a couple of minutes until fragrant.
  4. Drain and rinse the black beans and add them to the pan along with the Tajin seasoning, paprika and cumin. Cook for around 5 minutes and then squish some of the black beans with the back of your spatula / wooden spoon. 
  5. Throw in the tomatoes and cook for another 3-4 minutes.
  6. Warm up the tacos in a pan for 20 seconds on each side (or microwave each one for 20 seconds)
  7. Place the warm tacos on the lined baking tray. 
  8. Add the taco filling on one side of each taco and sprinkle some vegan cheese on top. 
  9. Fold the taco in half and squish it down slightly so that it stays folded.
  10. Bake the tacos for 20 minutes until slightly crisp and the cheese has melted.
  11. Add the coriander, yoghurt and lime juice to a food processor and blitz until smooth.
  12. Once the tacos are ready. Serve them up with the coriander yoghurt and a dash of hot sauce and enjoy!
