6 Ingredient Chickpea Bars | Vegan

I was always sceptical about adding chickpeas or beans of any kind into bakes, but since making these chickpea bars, it’s made me want to try so many more recipes using them!

These bars are fudgy, gooey and delicious!

They only require six ingredients:

1. chickpeas - these add protein to the bars and are the base of the bars.
2. smooth peanut butter - or almond, cashew, hazelnut butter, or any nut butter that you like really, however, this will impact the flavour of the bars!
3. agave syrup - or maple syrup! this adds sweetness to the bars.
4. vanilla extract - for a delicious hint of vanilla. You could also use vanilla paste.
5. baking powder - this helps the bars rise a little bit in the oven.
6. vegan chocolate - the most important step! (in my opinion). The chocolate makes the bars delicious and indulgent as well as making them fudgy and gooey! You can use a vegan milk chocolate alternative or a dark chocolate. I've not tried this recipe with white chocolate, but I imagine it would be delicious.


- 6 INGREDIENT CHICKPEA BARS -

You will need:

- 1 400g tin of chickpeas, rinsed and drained
- 1/2 cup smooth peanut butter or almond butter
- 1/4 cup agave syrup
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1 vegan milk chocolate bar

Method:

1. Preheat the oven to 180C and line a loaf tin with parchment paper.
2. Drain and rinse the chickpeas and add them to a food processor/blender along with the nut butter, agave syrup, vanilla extract, baking powder and a pinch of salt.
3. Blend until smooth.
4. Cut the chocolate into small chunks and fold into the mixture.
5. Pour the mixture into the loaf tin and bake for 25 minutes.
6. Once removed from the oven, add some extra chocolate chunks on top and allow to cool for about 15 minutes before cutting into bars.

I like serving mine warm but they are also delicious cold!
