Chocolate Honeycomb Ice Cream Cookie Sandwiches | Vegan

These delicious ice cream sandwiches are bound to become your new favourite dessert. I used vegan chocolate orange honeycomb dips from Mighty Fine as the perfect topping. They add a delicious crunch (and flavour of course) to the cookies to go alongside the chocolate drizzle and chocolate chips! You could also use chocolate chunks instead of chocolate chips if you wish.

- CHOCOLATE HONEYCOMB ICE CREAM SANDWICHES - 

Makes 5 sandwiches (or 10 cookies):

You will need:


1/2 cup vegan butter
1/2 cup caster sugar
1/2 cup light brown sugar
1 tsp vanilla extract
1 vegan egg (aquafaba or flax egg)
1 3/4 cups plain flour
1/2 tsp baking powder
1/2 tsp bicarbonate soda
3/4 cup dairy-free chocolate chips
1/2 cup vegan chocolate chunks
1 bag vegan chocolate orange honeycomb dips
1 tub of chocolate fudge ice cream

Method:

1. Preheat the oven to 180C and line two baking trays with parchment paper.
2. In a large bowl, combine the room-temperature butter with the light brown sugar and caster sugar.
3. Pour in the vegan egg and vanilla extract and mix until smooth.
4. Add the plain flour, bicarbonate soda and baking powder and mix until a smooth cookie dough is formed.
5. Fold the chocolate chips into the cookie dough.
6. Divide the cookie dough into 10 and roll into balls.
7. Place the cookies on the prepared baking tray and bake for 15 minutes.
8. The cookies will be very soft once removed from the oven but will harden as they cool.
9. Allow the cookies to cool before melting your favourite chocolate in a microwave-safe bowl in 35-second bursts, stirring in between.
10. Cut the chocolate honeycomb pieces into small chunks.
11. Drizzle the melted chocolate on top of the cookies and sprinkle the honeycomb pieces on top.
12. Place the cookies back onto a baking tray and place them in the fridge until the chocolate sets. This should only take about 20 minutes.
13. Add the chocolate fudge ice cream between 2 cookies to create a sandwich and enjoy!
