Garlic & Paprika Hummus | Vegan

Hummus is one of my absolute favourite foods, yet it’s something I tend to buy rather than make myself, which is silly considering how easy it is to make! I usually have all of these items in my fridge/cupboard anyway, so I thought why not.

This is delicious served with warm pitta or some sliced cucumber and carrots!

If you’re a hummus lover like me, then you absolutely must try this recipe!

- GARLIC & PAPRIKA HUMMUS -

You will need:

- 2 tins of chickpeas (reserve the chickpea water!)
- 2 large garlic cloves
- juice from 1 lemon
- 1 heaped tbsp tahini
- 2 tbsp olive oil
- 2 large ice cubes of a small handful of smaller ice cubes
- salt and pepper, to taste
- 1/2 red pepper, sliced
- 1/2 green pepper, sliced
- 3 tsp paprika
- small handful of fresh parsley
- flatbread to serve

Method:

1. Drain the chickpeas into a bowl, reserving the chickpea water and setting aside. Wash the chickpeas and remove a large handful (1/2 cup) of them, placing them in a separate bowl.
2. Add the remaining chickpeas, garlic, lemon juice, tahini, olive oil, 1 tbsp chickpea water (aquafaba), ice, salt and pepper to a food processor. Blend until smooth.
3. Place the 1/2 cup of chickpeas onto a baking tray or in the air fryer with the sliced red pepper and green pepper. Drizzle some olive oil on top and 2 tsp paprika. Roast in the oven for 20 minutes or in the air fryer for 10 on 180C.
4. Serve the hummus in a bowl, drizzling some extra olive oil (or chilli oil!) on top. Add the baked chickpeas and peppers, some more paprika and a sprinkle of fresh parsley.
5. Serve with some warm flatbread and enjoy!
