Berry Crumble | Vegan

You absolutely need to try this berry crumble, perfect for a cosy night in, packed with delicious blueberries, strawberries and raspberries!

I used frozen berries as this works out cheaper and the flavours are still exactly the same. However, you can absolutely still use fresh fruit if you wish.

I love serving this with dairy-free vanilla ice cream or custard!

- BERRY CRUMBLE -

Serves 3

You will need:


- 400g frozen berries (strawberries, blueberries and raspberries)
- Juice from 1 lemon
- Zest from 1/2 lemon
- 50g caster sugar
- 30g plain flour

For the crumble:


- 160g plain flour
- 50g caster sugar
- 35g light brown sugar
- 85g vegan butter

Method -

1. Preheat the oven to 180C and grease a small/medium-sized baking dish with some vegan butter.
2. In a bowl, combine the frozen berries (you could also use fresh, but it can be cheaper to buy them frozen) with the lemon juice and lemon zest.
3. Coat the berries in the caster sugar and add the flour. Mix it all around so the berries are well coated. Set aside.
4. In a separate bowl, combine the flour, caster sugar and light brown sugar.
5. Add the vegan butter and use your fingers to massage the mixture and create a fine crumb.
6. Pour the berry mixture into the baking dish and sprinkle the crumble layer on top.
7. Place in the oven and bake for 1 hour.
8. Serve with some dairy-free ice cream or custard and enjoy!
