Rice Cake Squares | Vegan

I know I’m so late to this trend, but I found some rice cakes in the cupboard and had to try it! this recipe is really simple and perfect if you love a no-bake snack. 

You only need 7 simple ingredients that you probably already have:

Smooth peanut butter - You could also use crunchy peanut butter for extra texture, but I prefer smooth. You could even use almond butter or any other nut butter that you like, but this will obviously change the flavour depending on the one you use.

Agave syrup - or maple syrup if preferred!

Vanilla extract - for a delicious hint of vanilla. You could also use vanilla paste.

Salted rice cakes - lightly salted rice cakes give these a nice balance between sweet and salty, but if you'd rather use any kind of sweetened rice cakes, that's completely okay!

Dairy-free chocolate - dark, milk or white, it's completely up to you! I used dairy-free milk chocolate, but I absolutely love white chocolate so can only imagine how delicious this would be!

Coconut oil - This helps melt the chocolate nicely.

Lightly salted peanuts - maybe skip this if you're using crunchy peanut butter as it may be a little much, but if you're using smooth pb, add some of these on top to make them look prettier and add a bit of crunch!

- RICE CAKE SQUARES -

You will need:

- 1/2 cup smooth peanut butter
- 1/3 cup agave syrup (or maple)
- 1/2 tsp vanilla extract
- 4 lightly salted rice cakes
- 1/2 cup dairy-free chocolate
- 1 tsp coconut oil
- Small handful of lightly salted peanuts

Method:


1. Simply add the peanut butter, agave syrup and vanilla extract to a bowl and mix to combine.
2. Crush the rice cakes and add them to the mixture. Mix until well-coated.
3. Line a loaf tin with parchment paper and scoop the mixture in. Flatten it out to form an even layer and place it in the freezer for 30 minutes.
4. Add the chocolate and the coconut oil to a microwave-safe bowl and place it in the microwave for 35 seconds. Stir and then place back in the microwave again for 20 seconds.
5. Remove the rice cake mixture from the freezer and pour the melted chocolate on top.
6. Sprinkle the peanuts on top and place them back in the freezer for another 20-30 minutes.
7. Slice into 10 squares and enjoy!
